The action of removing the cork from the cork oak is called extraction, and it is carried out between early June and late September, when the cells divide rapidly, producing new cells that have thin walls and are very fragile. An axe is used to free the cork slightly from the tree, and the handle is used as a lever to extract the cork. It is a very delicate operation, as if the bark of the cork tree is damaged then no more cork will grow there.
