Wooden table with an edge all around it and angled to drain the juice from the fish, used during different processes for salting blue fish, such as the anchovy, to put them in jars and prepare them for recipes. It is made of wood and was cleaned with caustic. Eventually, the tables were lined with plastic for easy cleaning, and today they are made of stainless steel.
