Manufactured in the 19th century, this press is made of wood and iron. The central spiral shaft, which was carved by hand, runs through the structure to press the grapes which are stored in the wooden container. The pressure exerted by the screw must not be excessive because this would crush the seeds, releasing too much tannin and affecting the flavour of the wine. Tannins are only present in red wines, which result from the fermentation not only of grapes but also of the skin and seeds.
